Ingredients:
- 4 flour tortillas (8-inch size)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/2 small onion, finely chopped
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp chili powder (optional, for a kick)
- Salt and pepper to taste
- 2 tbsp vegetable oil (for cooking)
- 1/4 cup fresh cilantro, chopped (optional, for garnish)
- Sour cream, salsa, or guacamole (optional, for dipping)

Prepare the filling:
- In a bowl, mash the black beans slightly with a fork or potato masher, leaving some chunks for texture.
- In a skillet, heat a little oil over medium heat. Add the chopped onion and cook for 3-4 minutes until softened.
- Stir in the corn, garlic powder, cumin, chili powder (if using), salt, and pepper. Cook for another 2-3 minutes until the corn is heated through and the spices are fragrant.
- Add the mashed black beans to the skillet and mix well. Cook for another 2 minutes, then remove from heat.

Assemble the quesadillas:
- Heat a separate large skillet over medium heat. Lightly brush or spray with a bit of vegetable oil.
- Place one tortilla in the skillet. Sprinkle a generous amount of shredded cheese on top, followed by a scoop of the black bean and corn mixture.
- Place another tortilla on top and gently press down to seal.
