Classic Egg Fried Rice
Classic Egg Fried Rice
A quick and delicious fried rice recipe with scrambled eggs, veggies, and a savory soy sauce base. Perfect for using up leftover rice and making a tasty, affordable meal!
Ingredients:
- 3 cups cooked rice (preferably cold, day-old rice works best)
- 2 large eggs, beaten
- 1/2 cup frozen peas (or any veggies you have on hand)
- 1/2 small onion, diced
- 2 cloves garlic, minced
- 3 tbsp soy sauce (low-sodium preferred)
- 1 tbsp sesame oil (optional, for extra flavor)
- 2 tbsp vegetable oil (or any cooking oil)
- 1/4 tsp black pepper
- 1/2 tsp salt (adjust to taste)
- 2 green onions, chopped (optional, for garnish)
- 1/2 tsp chili flakes (optional, for a little heat)
Instructions:
-
Prepare the rice:
- If you haven’t already, cook the rice according to the package instructions and let it cool. Day-old rice works best because it’s drier and won’t turn mushy when fried.
-
Scramble the eggs:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the beaten eggs to the skillet and scramble them until fully cooked. Remove from the pan and set aside.
-
Cook the veggies:
- In the same skillet, add the remaining tablespoon of oil. Add the diced onion and cook for about 2-3 minutes until softened.
- Stir in the garlic and cook for another 30 seconds until fragrant.
- Add the frozen peas (or other veggies you prefer) and cook for 2-3 minutes, until heated through.
-
Fry the rice:
- Add the cold, cooked rice to the skillet. Break up any clumps with a spatula and stir to mix with the veggies.
- Pour the soy sauce over the rice and stir to coat. Add sesame oil (if using), black pepper, and salt. Stir-fry for 3-4 minutes until everything is well combined and the rice is heated through.
-
Combine with eggs:
- Push the rice to one side of the skillet, and add the scrambled eggs back into the pan. Mix everything together, ensuring the eggs are evenly distributed throughout the rice.
-
Serve:
- Garnish with chopped green onions and chili flakes (if using).
- Serve hot, and enjoy your homemade egg fried rice!
Tips:
- Veggie variety: Feel free to add any other vegetables you have on hand, like bell peppers, carrots, or spinach. Fresh or leftover veggies work great!
- Add protein: For a more filling meal, toss in some cooked chicken, shrimp, or tofu.
- Use a hot pan: Cooking on medium-high heat helps get the rice crispy and gives it that classic fried rice texture.
Serving Suggestions:
- Serve as a side dish with stir-fried vegetables or grilled meats.
- For a one-bowl meal, top the fried rice with a fried egg or a few slices of avocado!
